Pasta with Perch
17/11/2023Pasta with perch is a delicate and tasty dish that combines the refined taste of perch with the simplicity of pasta. Here is a recipe you could follow:
Ingredients
- 320 g of pasta (penne or spaghetti are fine)
- 400 g of perch fillets
- 1 glass of white wine
- 1 clove of garlic
- Chopped parsley to taste
- Extra virgin olive oil
- Salt and pepper to taste
Preparation
- Clean the perch fillets well, removing any bones and skin. Cut them into pieces and set aside.
- In a large pan, heat a drizzle of oil with a clove of garlic. Once it’s golden, remove it and add the perch.
- Cook the fish over medium heat for a few minutes, then deglaze with a glass of white wine. Let the alcohol evaporate, then lower the heat and cook for another 5-10 minutes. Season with salt and pepper.
- In the meantime, cook the pasta in plenty of salted water following the cooking times indicated on the package to obtain al dente pasta.
- Drain the pasta and transfer it to the pan with the perch, stirring well to flavor everything.
- Sprinkle with fresh chopped parsley and serve immediately.
If you want an Italian touch, you could add some halved cherry tomatoes during the fish cooking for a note of freshness and color. Enjoy your meal!
