Parsley Pasta, Olives, Shrimp, and Mullets

Ingredients

  • 320 grams of pasta (linguine or spaghetti are fine)

  • 4 rock mullets, gutted and cleaned

  • 1 bunch of fresh parsley
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Half a glass of white wine
  • Grated zest of 1 organic lemon

Preparation

  1. Cook the pasta in plenty of salted water following the cooking times indicated on the package.
  2. While the pasta is cooking, wash and finely chop the parsley. Set aside.
  3. In a large pan, heat a drizzle of olive oil and sauté the garlic cloves without browning them too much.
  4. Add the mullets to the pan and let them cook for about 3-4 minutes per side. Once cooked, remove the mullets and set them aside.
  5. In the same pan, add a bit more oil if necessary and sauté the shrimp until they turn pink (about 2-3 minutes). Deglaze with the white wine and let it evaporate.
  6. Add the olives and half of the chopped parsley. Cook for another couple of minutes.
  7. Drain the pasta al dente and transfer it to the pan with the shrimp and olive sauce. If necessary, use some of the pasta cooking water to cream it.
  8. Off the heat, add the remaining chopped parsley and grated lemon zest. Mix well to flavor the pasta.
  9. Plate the pasta and lay the previously cooked mullets on top.

Serve immediately, perhaps with a drizzle of raw oil and a sprinkling of black pepper.
