Ingredients

- 4 rock mullets, gutted and cleaned

- 2 cloves of garlic

Preparation
- Cook the pasta in plenty of salted water following the cooking times indicated on the package.
- While the pasta is cooking, wash and finely chop the parsley. Set aside.
- In a large pan, heat a drizzle of olive oil and sauté the garlic cloves without browning them too much.
- Add the mullets to the pan and let them cook for about 3-4 minutes per side. Once cooked, remove the mullets and set them aside.
- In the same pan, add a bit more oil if necessary and sauté the shrimp until they turn pink (about 2-3 minutes). Deglaze with the white wine and let it evaporate.
- Add the olives and half of the chopped parsley. Cook for another couple of minutes.
- Drain the pasta al dente and transfer it to the pan with the shrimp and olive sauce. If necessary, use some of the pasta cooking water to cream it.
- Off the heat, add the remaining chopped parsley and grated lemon zest. Mix well to flavor the pasta.
- Plate the pasta and lay the previously cooked mullets on top.
Serve immediately, perhaps with a drizzle of raw oil and a sprinkling of black pepper.
