Pasta with Parmesan Cream and Sausage

Ingredients
- 320 g of pasta (such as penne or rigatoni)
- 200 g of Italian sausage (you can choose between sweet or spicy according to your preferences)
- 150 g of grated Parmesan
- 200 ml of cooking cream
- Salt and pepper to taste
- Extra virgin olive oil
Preparation
- Bring a pot of salted water to a boil and cook the pasta following the instructions on the package to achieve al dente cooking.
- In the meantime, remove the skin from the sausage and crumble it into a heated pan with a drizzle of extra virgin olive oil. Cook until it becomes golden and crispy.
- Heat the cream in a pan over medium heat and add the grated Parmesan. Stir continuously until you obtain a smooth and homogeneous cream. Adjust with salt and pepper.
- Drain the pasta and keep some of the cooking water aside.
- Add the pasta to the Parmesan cream and mix well, adding a little of the cooking water set aside to reach the desired consistency.
- Finally, incorporate the cooked sausage into the pasta.
- Serve immediately, finishing the dish with a sprinkle of fresh Parmesan and a drizzle of raw oil, if you wish.
