Pasta with onions and potatoes

Ingredients

  • 320 g of pasta (penne or rigatoni work well)
  • 2 medium-sized potatoes
  • 2 large onions

  • Water (for cooking the pasta)
  • A sprig of fresh parsley (optional)

Preparation

  1. Start by peeling and cutting the potatoes into not too small cubes. Finely slice the onions.
  2. In a large pan, heat the extra virgin olive oil and add the sliced onions. Let them sauté over low heat until they become translucent and soft.
  3. Add the potato cubes to the pan with the onions, season with salt and pepper. If you like, you can add a ladle of hot water to help the potatoes cook better.
  4. In the meantime, bring a pot of salted water to a boil. Cook the pasta following the instructions on the package, until it is cooked to the desired level (al dente is ideal).
  5. When the potatoes are almost fully cooked and have absorbed the liquid, use a fork to crush some of them in the pan to thicken the sauce.
  6. Drain the pasta and transfer it to the pan with the onion and potato sauce. Mix well to flavor the pasta.
  7. If desired, sprinkle with grated Parmesan and garnish with fresh chopped parsley.

Serve the pasta hot so you can enjoy the creaminess of the onions and potatoes. If you prefer a richer variant, you can add bacon or guanciale fried together with the onions.
