Pasta with Mushrooms, Shrimp, and Salmon

Here is a recipe that melds flavors from the sea with those from the forest, creating a rich and flavorful dish.

Ingredients

For 4 servings:

  • 320g of pasta (penne, farfalle, or spaghetti)
  • 200g of peeled and cleaned shrimp
  • 200g of fresh salmon
  • 250g of mushrooms (champignon or porcini, depending on the season and availability)
  • 2 cloves of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • 1 glass of white wine
  • 200 ml of cream (optional)

Preparation

  1. Clean the mushrooms by removing any residue and slice them or cut them into pieces, depending on your preference.

  2. Cut the salmon into roughly 2 cm cubes.

  3. In a large skillet, sauté the garlic with a drizzle of extra virgin olive oil. Add the mushrooms and let them sauté until they turn golden.

  4. Meanwhile, put a pot of salted water on the stove to cook the pasta.

  5. Add the shrimp to the mushrooms, let them cook for a few minutes, then add the salmon cubes. Cook for another 2-3 minutes, then deglaze with the white wine and let it evaporate.

  6. If you like a creamy touch, you can add the cream, otherwise, you can omit it for a lighter version.

  7. Season with salt and pepper and cook for a few minutes until the salmon and shrimp are fully cooked.

  8. When the water boils, cook the pasta al dente according to the package instructions.

  9. Drain the pasta and transfer it to the pan with the seafood and mushroom sauce. Stir well to flavor the pasta.

  10. Plate and garnish with chopped fresh parsley.
