Pasta with mushrooms and sausage

Pasta with mushrooms and sausage is a rich and flavorful dish, perfect for a hearty dinner. Here’s how to prepare it:

Ingredients

  • 320g of pasta (penne, rigatoni or another short format is fine)
  • 200g of mushrooms (champignons, porcini, or mixed)
  • 200g of sausage (choose good quality, preferably fresh sausage)
  • 1/2 small onion
  • 1 clove of garlic
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • White wine (a splash for deglazing)
  • Chopped parsley (optional)
  • Red chili pepper (optional)
  • Grated Parmesan cheese (to serve)

Preparation

  1. Begin by cleaning the mushrooms with a damp cloth or a brush to remove any soil residues. Slice them or cut them into not-too-small pieces.
  2. In a large pan, sauté the finely chopped onion in extra virgin olive oil until it becomes translucent. Add the chopped or crushed garlic and let it brown slightly, being careful not to burn it.
  3. Add the sausage, previously removed from the casing and crumbled, and brown it until it’s well golden. At this point, if desired, you can add a pinch of red chili pepper.
  4. Deglaze with a splash of white wine and let the alcohol evaporate.
  5. Add the mushrooms to the sausage, salt and pepper to taste, and cook everything for about 10-15 minutes, or until the mushrooms are tender and the sauce has reduced.
  6. In the meantime, bring plenty of salted water to a boil in a pot and cook the pasta al dente following the instructions on the package.
  7. Drain the pasta and transfer it to the pan with the mushroom and sausage sauce. Stir well to flavor the pasta.
  8. Serve the pasta hot, garnishing with fresh chopped parsley and, if desired, a generous sprinkle of grated Parmesan cheese.
