Pasta with Prawns
17/11/2023Here is a classic Italian recipe for preparing pasta with prawns:
Ingredients
- 320g of pasta (spaghetti, linguine, or your favorite long pasta)
- 400g of fresh or frozen prawns
- 2 cloves of garlic
- Fresh parsley to taste
- 1 chili pepper (optional)
- 150 ml of white wine
- Extra virgin olive oil to taste
- Salt and pepper to taste
- The juice of half a lemon (optional)
Preparation
- Clean the prawns: remove the head, tail, and shell. Also eliminate the intestinal vein by making a cut along the back of the prawn with a sharp knife.
- In a large frying pan, heat a drizzle of extra virgin olive oil and add the peeled garlic cloves (whole or chopped, as per your preference) and the chili pepper if you desire a touch of spice.
- When the garlic turns golden, add the prawns and quickly sauté them on both sides. Then deglaze with the white wine and let the alcohol evaporate.
- Cook the prawns for a few minutes until they turn an even pink color. At this point, season with salt and pepper and add the chopped parsley and lemon juice if using. Remove from heat and set aside.
- Meanwhile, bring a pot of salted water to a boil and cook the pasta according to the package instructions for an al dente texture.
- Drain the pasta and transfer it to the frying pan with the prawns, turning the heat back on to let everything season together for a minute, stirring well.
- Serve immediately, plating with an additional sprinkle of fresh parsley if desired.
It is possible to enhance the dish with other ingredients, such as julienned zucchini or halved cherry tomatoes, which can be added during the prawns’ cooking for a note of color and freshness.
