Pasta al gorgonzola

Ingredients
- Pasta (preferably penne or farfalle) - 320g
- Sweet gorgonzola - 200g
- Cooking cream - 200ml
- Grated Parmesan cheese - 50g
- Nutmeg - a pinch
- Black pepper - to taste
- Salt - to taste
- Butter - 30g (optional)
- Chopped walnuts - for garnish (optional)
Preparation
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, take a pan and, if you decide to use it, melt the butter over medium heat.
- Add the gorgonzola cut into pieces and let it melt, stirring gently.
- Pour the cream into the pan and stir until the mixture is homogeneous.
- Adjust with salt and add a pinch of nutmeg and black pepper to taste.
- Drain the pasta while preserving some cooking water and add it to the pan with the gorgonzola and cream.
- Mix well and add some cooking water if necessary to make the sauce lighter.
- Serve immediately, sprinkling with grated Parmesan cheese and, if desired, garnishing with chopped walnuts.

Gorgonzola is an Italian cheese with Protected Designation of Origin (PDO) status, mainly produced in the regions of Lombardy and Piedmont. There are two main variants: Dolce Gorgonzola, which is softer and less sharp, and Piccante Gorgonzola, which is aged longer and has a stronger and more decisive flavor. For this recipe, it is preferable to use Dolce Gorgonzola.
