Pasta friggitelli and sausage

Here is a classic recipe to prepare pasta with friggitelli peppers and sausage, a dish that combines strong and decisive flavors with the sweetness of friggitelli, small sweet green peppers typical of the region.

Ingredients

  • 320 g of pasta (penne or rigatoni work well)
  • 300 g of fresh sausage
  • 400 g of friggitelli peppers
  • 2 cloves of garlic
  • Extra virgin olive oil as needed
  • Salt and pepper as needed
  • Grated Pecorino Romano cheese (optional)
  • A pinch of red pepper flakes (optional)

Preparation

  1. Wash the friggitelli peppers, remove the stalk and the internal seeds, and cut them into rings or strips not too thin.
  2. In a large pan, heat a drizzle of extra virgin olive oil and sauté the peeled garlic cloves.
  3. Remove the garlic and add the friggitelli peppers, cooking them over medium heat for about 10 minutes, until they are tender but still crunchy. Season with salt and pepper.
  4. In another frying pan, cook the crumbled sausage until it turns golden brown and crispy. If you like, you can add a pinch of red pepper flakes.
  5. Bring a pot of salted water to a boil and cook the pasta al dente according to the instructions on the package.
  6. Drain the pasta and transfer it to the pan with the friggitelli, adding the sausage as well. Toss everything together for a minute to blend the flavors.
  7. Serve the pasta hot with a sprinkling of grated Pecorino Romano cheese, if desired.
