Pasta with Fresh Tuna

Pasta with fresh tuna is a simple and tasty dish that combines the freshness of the fish with the convenience of a quick-to-prepare pasta dish. Here is an Italian version of the dish:

Ingredients

  • 320 g of pasta (spaghetti, penne, or other preferred shapes)
  • 400 g of fresh tuna
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Chopped fresh parsley
  • 1 lemon (grated zest and juice)
  • Salt-cured capers (optional)
  • Black olives (optional)

Preparation

  1. Begin by cooking the pasta in plenty of salted water following the package instructions to achieve an al dente texture.
  2. Meanwhile, cut the fresh tuna into cubes of about 1 cm on each side, taking care to remove any bones or dark parts.
  3. In a large skillet, warm a drizzle of extra virgin olive oil and add the whole peeled garlic cloves to flavor the oil. If desired, rinsed capers from the salt and sliced black olives can also be added.
  4. Once the garlic is golden, remove it and add the tuna cubes to the skillet. Sauté them for a couple of minutes until they are golden on the outside but still pink inside.
  5. Drain the pasta and transfer it to the skillet with the tuna. Mix well to flavor the pasta with the seasoning.
  6. Add the pepper, finely chopped parsley, and grated lemon zest. Finally, drizzle with a little lemon juice to freshen up the dish.
  7. Serve immediately, garnishing with more fresh parsley if desired.

This recipe combines the simplicity of Mediterranean cooking with the unique flavor of fresh tuna; it’s important not to overcook the tuna to maintain its tenderness and delicate flavor.
