Ingredients
- 200 g of short pasta (such as penne, fusilli, or farfalle)
- 250 g of cherry tomatoes
- 200 g of feta cheese
- 60 ml of extra virgin olive oil
- 2 cloves of garlic
- Salt and pepper to taste
- Oregano or fresh basil (as desired)
- Chili flakes (optional)
Preparation
- Preheat the oven to 200 °C (180 °C if fan-assisted).
- In a sufficiently large baking dish, arrange the washed and halved cherry tomatoes.
- Add the whole or sliced garlic cloves, according to your preferences.
- Place the feta in the center of the dish and sprinkle with a bit of oil, salt, pepper, and chili flakes if you wish. Also add the oregano or chopped basil leaves.
- Pour the remaining oil over the cherry tomatoes and mix lightly to season everything.
- Bake the dish for about 25-30 minutes or until the cherry tomatoes are wilted and the feta is golden.
- Meanwhile, bring a pot of salted water to a boil and cook the pasta until al dente.
- Drain the pasta and reserve some of the cooking water.
- Remove the baking dish from the oven and mash the feta and tomatoes with a fork to create a rustic cream.
- Add the cooked pasta to the feta and tomato cream, mix well, and if necessary, add some of the reserved cooking water to make the sauce creamier.
- Serve the pasta hot, adding more oregano or fresh basil as garnish.
