Baked Pasta with Feta and Spinach

Ingredients

  • 400 g of short pasta (penne, fusilli, farfalle)
  • 200 g of feta cheese

Preparation

  1. Preheat the oven to 200 °C.
  2. In a baking dish, place the washed cherry tomatoes and whole peeled garlic (you can also add a small piece of chili pepper for a bit of spiciness, if you like).
  3. Place the feta in the center and drizzle with olive oil, a pinch of pepper, and chili flakes if desired. Add the tomatoes and garlic with oil, salt, and a few more pinches of pepper.
  4. Bake the dish for about 25-30 minutes until the cheese has softened, and the tomatoes have wilted.
  5. While the tomatoes and feta are in the oven, boil the pasta in plenty of salted water, following the cooking times listed on the package to achieve al dente pasta.
  6. In the last 5 minutes of baking the tomatoes and feta, add the fresh spinach to the dish to let it wilt slightly.
  7. Drain the pasta and add it to the baking dish with the tomatoes, feta, and spinach. Mix everything together, mashing the feta and blending it well with the other ingredients to form a smooth cream.
  8. Serve the pasta hot, garnished with chopped fresh basil if you like.
