Baked Pasta with Feta and Spinach

Ingredients
- 400 g of short pasta (penne, fusilli, farfalle)
- 200 g of feta cheese
- 200 g of fresh spinach
- 250 g of cherry tomatoes
- 3 tablespoons of extra virgin olive oil
- 2 cloves of garlic
- A pinch of salt and pepper
- Chili flakes (optional)
- Fresh basil for garnishing (optional)
Preparation
- Preheat the oven to 200 °C.
- In a baking dish, place the washed cherry tomatoes and whole peeled garlic (you can also add a small piece of chili pepper for a bit of spiciness, if you like).
- Place the feta in the center and drizzle with olive oil, a pinch of pepper, and chili flakes if desired. Add the tomatoes and garlic with oil, salt, and a few more pinches of pepper.
- Bake the dish for about 25-30 minutes until the cheese has softened, and the tomatoes have wilted.
- While the tomatoes and feta are in the oven, boil the pasta in plenty of salted water, following the cooking times listed on the package to achieve al dente pasta.
- In the last 5 minutes of baking the tomatoes and feta, add the fresh spinach to the dish to let it wilt slightly.
- Drain the pasta and add it to the baking dish with the tomatoes, feta, and spinach. Mix everything together, mashing the feta and blending it well with the other ingredients to form a smooth cream.
- Serve the pasta hot, garnished with chopped fresh basil if you like.
This simple and tasty recipe brings Mediterranean flavors to the table and is easy to prepare. Alternatively, you can always add or change some ingredients according to your tastes or needs. For example, you can use frozen spinach if you don’t have fresh, or add black olives for an even more intense flavor.
