Pasta with Cod

I can suggest a tasty recipe to prepare Pasta with Cod.

Ingredients

  • 320 g of pasta (linguine or spaghetti)
  • 200 g of already soaked cod
  • Fresh parsley to taste
  • Garlic, 1 clove
  • Extra virgin olive oil
  • Chili pepper (optional)
  • Salt and pepper to taste
  • 100 ml of tomato puree (optional, for a red sauce variation)
  • 50 ml of white wine (optional)

Preparation

  1. Bring a pot of salted water to a boil for the pasta.
  2. Meanwhile, cut the soaked cod into pieces and let it drain well.
  3. In a large skillet, heat some extra virgin olive oil and sauté the minced garlic with a bit of chili pepper, if you like.
  4. Add the cod and let it brown for a few minutes. If you want, you can deglaze with white wine.
  5. (Optional) If you have chosen the red sauce variation: add the tomato puree and let it simmer on low heat for 10-15 minutes. Adjust the seasoning with salt and pepper.
  6. Throw the pasta into the boiling water and cook according to the package instructions to get an al dente texture.
  7. Drain the pasta and transfer it to the skillet with the cod (and tomato sauce if you chose the red sauce variation), and toss everything together for a few minutes to let the pasta absorb the flavor.
  8. Sprinkle with freshly chopped parsley to taste.
  9. Serve hot with a drizzle of raw extra virgin olive oil.

For an even more Italian twist, you could add Taggiasca or black olives chopped into pieces while cooking the cod to enhance the flavor.
