Pasta with Clams and Broccoli

Pasta with clams and broccoli is a dish that combines the freshness of seafood with the crunchiness of vegetables. Here is a recipe with an Italian twist:

Ingredients

  • 320 g of pasta (linguine or spaghetti)
  • 500 g of fresh clams
  • 300 g of broccoli
  • 2 cloves of garlic
  • 1 chili pepper (optional)
  • Fresh parsley to taste
  • 100 ml of dry white wine
  • Extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Preparation

  1. Start by cleaning the clams by soaking them in a bowl of salted water for about an hour so they release any sand. Then rinse them under cold running water.
  2. Clean the broccoli by separating the florets from the stem and cook them in boiling salted water for about 5-7 minutes until al dente. Drain and set aside.
  3. In a large pan, sauté the chopped garlic (and chili pepper if you like) in plenty of extra virgin olive oil until golden.
  4. Add the clams and white wine. Cover the pan and wait until the clams have opened, discarding any that remain closed.
  5. Meanwhile, cook the pasta in plenty of salted water, following the timing on the package for al dente cooking.
  6. Add the broccoli to the pan with the clams and let them flavor for a few minutes.
  7. When the pasta is ready, drain it and transfer it into the pan with the clams and broccoli. Toss everything together to combine the flavors.
  8. Serve and sprinkle with chopped fresh parsley. Add a dash of fresh pepper and a drizzle of raw oil.
