Pasta with Clams and Broccoli

Ingredients
- 320 g of pasta (linguine or spaghetti)
- 500 g of fresh clams
- 300 g of broccoli
- 2 cloves of garlic
- 1 chili pepper (optional)
- Fresh parsley to taste
- 100 ml of dry white wine
- Extra virgin olive oil
- Salt to taste
- Pepper to taste
Preparation
- Start by cleaning the clams by soaking them in a bowl of salted water for about an hour so they release any sand. Then rinse them under cold running water.
- Clean the broccoli by separating the florets from the stem and cook them in boiling salted water for about 5-7 minutes until al dente. Drain and set aside.
- In a large pan, sauté the chopped garlic (and chili pepper if you like) in plenty of extra virgin olive oil until golden.
- Add the clams and white wine. Cover the pan and wait until the clams have opened, discarding any that remain closed.
- Meanwhile, cook the pasta in plenty of salted water, following the timing on the package for al dente cooking.
- Add the broccoli to the pan with the clams and let them flavor for a few minutes.
- When the pasta is ready, drain it and transfer it into the pan with the clams and broccoli. Toss everything together to combine the flavors.
- Serve and sprinkle with chopped fresh parsley. Add a dash of fresh pepper and a drizzle of raw oil.
