Pasta with Swiss chard and Parmesan

Ingredients

  • 350 g of pasta (penne or farfalle are perfect for this recipe)
  • 200 g of cleaned Swiss chard
  • 80 g of DOP Parmesan cheese, grated
  • 2 cloves of garlic
  • 4 tablespoons of extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by cleaning the Swiss chard: remove the tougher parts of the stems and carefully wash the leaves.
  2. Bring a pot of salted water to a boil and blanch the Swiss chard for a few minutes until they soften. Drain them and squeeze out excess water.
  3. In a wide frying pan, sauté the garlic cloves in the extra virgin olive oil. When the garlic starts to golden, remove it and add the Swiss chard, sautéing for a few minutes. Season with salt and pepper.
  4. At the same time, cook the pasta in plenty of salted water according to the package instructions to keep it al dente.
  5. Drain the pasta and add it to the Swiss chard in the frying pan, tossing everything to blend the ingredients.
  6. Sprinkle with generous amounts of grated Parmesan, mix well and serve immediately.

An Italian touch: you can enrich the dish with some chopped walnut kernels to add crunchiness and a more intense flavor.
