Pasta with Chanterelles
17/11/2023Chanterelles, also known as girolles, are mushrooms with a delicate and slightly peppery flavor that pair perfectly with pasta. Here’s how to prepare a delicious plate of pasta with chanterelles:
Ingredients
- 320 g of pasta (fettuccine or tagliatelle are fine)
- 300 g of chanterelles
- 2 cloves of garlic
- Fresh parsley to taste
- 100 ml of cooking cream (optional)
- 50 ml of white wine
- Extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Preparation

Carefully clean the chanterelles with a damp cloth or a brush, trying to remove any soil residues. Avoid washing them under running water as they would absorb too much liquid, losing some of their flavor.

Mince the garlic and chop it finely together with the fresh parsley.

Heat some extra virgin olive oil in a large pan and sauté the garlic over low heat until it becomes golden.

Add the chanterelles to the pan and sauté them over medium-high heat until they start to release their natural water.

Pour in the white wine and let the alcohol evaporate on high heat.

If you want a creamier version, you can add the cooking cream, otherwise continue to cook the mushrooms until they are tender. Season with salt and pepper.

Meanwhile, bring a large pot of salted water to a boil and cook the pasta al dente according to the package instructions.

Drain the pasta, reserving some of the cooking water, and add it to the pan with the chanterelles. Stir well to combine everything, if necessary add some of the cooking water to make the sauce more fluid.

Plate and, if you like, sprinkle with grated Parmesan cheese and a handful of chopped fresh parsley.
Serve your pasta with chanterelles nice and hot and enjoy the combination of flavors between the earth and the grain.

Chanterelles are highly appreciated in Europe and are considered a real delicacy in Northern countries such as Germany and Poland. In Italy, their collection mainly takes place in summer and autumn, periods in which these mushrooms grow abundantly in the woods.
