Pasta with Burrata Cream and Smoked Salmon
17/11/2023Here is the recipe for pasta with burrata cream and smoked salmon, a dish that combines the delicate aroma of smoked salmon with the creaminess of burrata in a perfect marriage for a special lunch or dinner.
Ingredients
- 320 g of pasta of your choice (e.g., tagliatelle, fusilli, farfalle)
- 200 g of burrata
- 100 g of smoked salmon
- Extra virgin olive oil to taste
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional for garnishing)
- Lemon juice (optional, to add a touch of acidity)
Preparation
- Bring a pot of water to a boil and, once boiling, add salt and the pasta. Cook the pasta according to the package instructions to achieve an al dente texture.
- While the pasta is cooking, prepare the burrata cream. Take the burrata and, in a large bowl, work it with a fork or an immersion blender until you get a smooth and homogeneous cream. If necessary, you can add a bit of the pasta cooking water to help make it creamier.
- Cut the smoked salmon into strips or cubes, depending on your preference.
- Drain the pasta al dente, reserving some of the cooking water, and transfer it to a wide pan.
- Add the burrata cream to the pasta and mix gently. If the cream is too thick, add the reserved cooking water bit by bit to reach the desired consistency.
- Add the smoked salmon, a drizzle of extra virgin olive oil, a grind of black pepper, and if you like, a few drops of lemon juice. Combine everything gently.
- Serve the pasta hot, decorating the dish with chopped fresh parsley if you like, for a touch of color and freshness.
Curiosity
Smoked salmon is a very versatile ingredient that pairs well with the creaminess of fresh cheeses like burrata. It’s important not to cook the smoked salmon once added to the pasta to maintain its delicate taste and soft texture. Burrata, on the other hand, is a cheese typical of Southern Italy, particularly Puglia, and is known for its soft consistency and creamy heart, which pairs particularly well with pasta.
