Pasta burrata e gamberi

Pasta with burrata and shrimp is an elegant dish full of flavor, perfect for special occasions or when you want to change up the routine with a slightly more sophisticated first course. Here is the recipe:

Ingredients

  • 320 g of pasta (for example, linguine or spaghetti)
  • 200 g of fresh or frozen and already cleaned shrimp
  • 1 burrata (about 200 g)
  • 1 clove of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt to taste
  • Chili pepper (optional)
  • Lemon juice

Preparation

  1. Bring a pot of salted water to a boil for the pasta. Add the pasta and cook al dente according to the package directions.

  2. Meanwhile, in a wide pan, heat a drizzle of extra virgin olive oil with a crushed garlic clove (which you will remove before adding the shrimp if you prefer a milder flavor).

  3. Add the peeled and cleaned shrimp to the pan. If you like, you can add a bit of chili pepper to give it a spicy touch.

  4. Sauté the shrimp until they turn pink and slightly golden, then add a pinch of salt and a few drops of fresh lemon juice.

  5. Drain the pasta al dente and pour it into the pan with the shrimp, leaving a little cooking water. Stir well to let the pasta absorb the flavor of the shrimp.

  6. Turn off the heat and add the burrata cut into pieces, mixing gently to let it melt a bit with the heat of the pasta.

  7. Plate the pasta and sprinkle with freshly chopped parsley for a touch of color and freshness.

The burrata will melt slightly, creating a cream that will combine with the shrimp sauce, resulting in a creamy and enveloping dish.

Curiosity

Burrata is a cheese from Puglia greatly appreciated for its creaminess. Consisting of a mozzarella shell filled with cream and mozzarella pieces (‘stracciatella’), it is perfect to pair with delicate-tasting ingredients like shrimp.
