Pasta with Broccoli and Salmon
17/11/2023Pasta with broccoli and salmon is a creamy, flavorful dish that combines the sweetness of broccoli with the rich taste of smoked salmon. Here’s how to prepare it.
Ingredients
- 320 g of pasta (penne, fusilli or whatever shape you prefer)
- 200 g of smoked salmon
- 300 g of broccoli
- 1 clove of garlic
- 200 ml of cooking cream
- Extra virgin olive oil to taste
- Salt to taste
- Pepper to taste
- Grated Parmesan cheese (optional)
Preparation
- Begin by cleaning the broccoli: remove the florets from the stem and wash them under running water. Cut the florets into pieces if they are too large to ensure even cooking.
- Bring a pot of salted water to a boil and blanch the broccoli. Cook them for about 5-7 minutes; they should be tender yet still crisp.
- Meanwhile, cook the pasta in plenty of salted water according to the package instructions to achieve an al dente texture.
- In a large skillet, heat a drizzle of extra virgin olive oil and add a clove of garlic to flavor the oil. Sauté for a few minutes over medium heat until the garlic turns golden. Then I recommend removing it.
- Add the broccoli to the pan and briefly sauté with the garlic flavored oil.
- Slice the smoked salmon into strips and add it to the broccoli; let it flavor for a couple of minutes.
- Pour the cooking cream into the skillet, gently stir, and let everything blend together for a few minutes. If you want a thicker sauce, you can cook it for a few minutes more. Adjust the salt and add a sprinkling of black pepper.
- Drain the pasta al dente and transfer it to the skillet with the broccoli and salmon sauce. Mix well so that the pasta is evenly seasoned.
- Serve immediately with a sprinkling of grated Parmesan cheese on top, if desired.
Curiosity
It’s interesting to note how pasta with broccoli and salmon combines two elements that are often kept separate in traditional cuisine: fish and cheese. In Italy, this pairing is often avoided, but with smoked salmon, the Parmesan can lend a touch of flavor that blends surprisingly well with the rest of the ingredients.
