Pasta with Bra Sauce

  1. Brown the sausage in a pan, breaking it into small pieces, and increase the heat slightly until it is well browned.
  2. Deglaze with white wine and let the alcohol evaporate.
  3. Lower the heat and continue cooking for about 20 minutes, adding a bit of the pasta cooking water if the sauce dries out too much.
  4. In the meantime, bring a pot of salted water to a boil and cook the pasta al dente following the instructions on the package.
  5. Drain the pasta, reserving some of the cooking water.
  6. Combine the pasta with the sausage sauce, add the grated Bra cheese, and mix well to bind everything together. If necessary, add some cooking water to make the sauce creamier.
  7. Adjust salt and pepper to taste.
  8. Serve hot and, if desired, garnish with chopped parsley.
