Ingredients
- 320 g of pasta of your choice (penne, fusilli, rigatoni work well)
- 2 bell peppers (one red and one yellow for color)
- 200 g of fresh sausage
- 150 g of Greek feta
- 2 cloves of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- A pinch of red pepper flakes (optional)
- Aromatic herbs to taste (basil or oregano for example)
Preparation
- Start by bringing a pot of water to a boil for the pasta. Once boiling, salt it and cook the pasta according to the package instructions.
- While the water is heating, wash and slice the peppers into strips. Slice the garlic cloves.
- In a large skillet, heat a drizzle of oil and add the garlic to fry until it becomes golden. Add the red pepper flakes if you want a spicy note.
- Remove the skin from the sausage and crumble it into the skillet. Brown the sausage over medium heat until it’s crispy and well cooked.
- Add the peppers to the sausage and cook together until the peppers are soft but still crisp.
- When the pasta is ready, drain it and set aside some of the cooking water.
- Add the pasta to the skillet with the peppers and sausage, mixing well to flavor everything.
- If the mixture is too dry, add some cooking water to make it creamy.
- Crumble the feta over the pasta and mix gently.
- Finally, adjust the salt and pepper and garnish with the fresh aromatic herbs you have chosen.
