Ingredients
- 320g of pasta of your choice (penne or rigatoni work well)
- 2 medium-sized red bell peppers
- 200g of Taleggio DOP cheese
- 1 clove of garlic
- Extra virgin olive oil (to taste)
- Salt and pepper (to taste)
- Fresh basil for garnish (optional)
- Grated Parmesan for serving (optional)
Preparation

Start by washing the bell peppers, then cut them in half, remove the seeds and the white inner parts. Slice the peppers into strips and then into small pieces.

In a large skillet, heat a drizzle of extra virgin olive oil and add the peeled and crushed garlic clove. Let the garlic brown until it’s golden, then remove it and add the peppers. Cook over medium heat for about 15-20 minutes or until the peppers are soft.

Meanwhile, bring a pot of salted water to a boil and cook the pasta according to the package instructions to achieve al dente texture.

Once the peppers are cooked, remove a small amount for the final garnish and blend the rest in a blender or with an immersion blender to create a cream. If necessary, add a little pasta cooking water to make it more fluid.

Cut the Taleggio into cubes, removing the rind if preferred.

Drain the al dente pasta, reserving some cooking water, and transfer it to the skillet with the pepper cream. Add the Taleggio and stir over low heat until the cheese has completely melted, adding a bit of the cooking water to keep the cream soft and light.

Serve the pasta, garnish with the pieces of pepper set aside, fresh basil leaves, and, if desired, a sprinkle of Parmesan.
