Ingredients

  • 320 g of pasta (types like spaghetti, linguine, or fusilli work well)
  • 1 ripe avocado
  • 100 g of sun-dried tomatoes in oil
  • 2 cloves of garlic
  • Juice of 1 lemon
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil (optional)
  • Parmesan cheese flakes or grated parmesan (optional for a non-vegan variant)

Preparation

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
  2. Meanwhile, prepare the avocado sauce: cut the avocado in half, remove the pit, and scoop out the pulp with a spoon. Put the pulp in a bowl and mash it with a fork until creamy. Add the lemon juice, a pinch of salt and pepper, and mix well.
