Pasta with Artichokes and Sausage

Ingredients

  • 320g of pasta (penne, rigatoni, or your preference)
  • 4 artichokes
  • 200g of sausage
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Pecorino Romano cheese (optional)
  • A glass of white wine

Preparation

  1. Clean the artichokes by removing the toughest outer leaves, cutting off the tips and the outer part of the stem. Cut them into thin wedges and place them in a bowl with water and lemon juice to prevent them from turning black.
  2. Remove the skin from the sausage and crumble it with a fork.
  3. In a large skillet, heat a bit of oil with a clove of garlic. Add the crumbled sausage and let it brown until it becomes slightly crispy.
  4. Add the drained and dried artichokes, let them sauté for a few minutes, then deglaze with the white wine.
  5. Lower the heat, cover the skillet, and cook for about 15-20 minutes until the artichokes become tender. If necessary, add a bit of water to prevent the sauce from drying out too much.
  6. Meanwhile, bring a pot of salted water to a boil and cook the pasta until al dente.
  7. Drain the pasta and transfer it to the skillet with the artichoke and sausage sauce. Mix well to combine.
  8. Serve hot and, if desired, sprinkle with grated Pecorino Romano cheese.
