Pasta with Artichokes and Sausage

Ingredients
- 320g of pasta (penne, rigatoni, or your preference)
- 4 artichokes
- 200g of sausage
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Grated Pecorino Romano cheese (optional)
- A glass of white wine
Preparation
- Clean the artichokes by removing the toughest outer leaves, cutting off the tips and the outer part of the stem. Cut them into thin wedges and place them in a bowl with water and lemon juice to prevent them from turning black.
- Remove the skin from the sausage and crumble it with a fork.
- In a large skillet, heat a bit of oil with a clove of garlic. Add the crumbled sausage and let it brown until it becomes slightly crispy.
- Add the drained and dried artichokes, let them sauté for a few minutes, then deglaze with the white wine.
- Lower the heat, cover the skillet, and cook for about 15-20 minutes until the artichokes become tender. If necessary, add a bit of water to prevent the sauce from drying out too much.
- Meanwhile, bring a pot of salted water to a boil and cook the pasta until al dente.
- Drain the pasta and transfer it to the skillet with the artichoke and sausage sauce. Mix well to combine.
- Serve hot and, if desired, sprinkle with grated Pecorino Romano cheese.
