Pasta with Anchovy Cream

Pasta with anchovy cream is a flavorful and elegant dish, as well as very simple to prepare. Here is the recipe with an Italian twist:

Ingredients

  • 320 grams of pasta (linguine, spaghetti or bucatini)
  • 10 fillets of anchovies in oil
  • 2 cloves of garlic
  • 100 ml of cooking cream
  • Chopped parsley to taste
  • Extra virgin olive oil
  • Chili pepper (optional)
  • Salt to taste
  • Black pepper to taste

Preparation

  1. Boil a pot of water for the pasta and add salt when it reaches a boil.
  2. In the meantime, in a large enough pan, heat a drizzle of extra virgin olive oil and add the crushed garlic cloves (remove them once golden if you want a less intense flavor).
  3. Add the anchovy fillets, letting them dissolve over low heat. If desired, you can add a piece of chili pepper to give it a spicy note.
  4. Pour the cream into the pan and let it cook over low heat for a few minutes, until you get a homogeneous cream.
  5. Cook the pasta according to the instructions on the package, drain it al dente and toss it with the anchovy cream in the pan.
  6. Add some of the pasta cooking water to better blend the sauce if necessary.
  7. Sprinkle with chopped parsley and a pinch of black pepper, and stir well.
  8. Serve immediately, with a drizzle of raw oil if you prefer.
