Passion Fruit Semi-Freddo Hearts

Ingredients
- 200 g of fresh cream
- 100 g of powdered sugar
- 50 g of condensed milk
- The pulp of 4 passion fruits
- 2 sheets of gelatin (or 4 g of powdered gelatin)
- Crumbled dry biscuits (for the base)
Preparation
- Start by soaking the gelatin sheets in cold water for about 10 minutes until they become soft.
- In the meantime, cut the passion fruits in half and empty them with a teaspoon to remove the pulp. Strain it through a sieve to remove the seeds and keep the obtained juice.
- Heat the passion fruit juice in a small saucepan until it becomes lukewarm. Squeeze out the soaked gelatin and dissolve it in the hot juice, stirring until fully absorbed. Allow the mixture to cool.
- In a bowl, whip the fresh cream with powdered sugar until you get a firm consistency.
- Gently fold the condensed milk into the whipped cream mixture, trying not to deflate it.
- Add the passion fruit juice with the dissolved gelatin, incorporating it with slow and gentle movements to keep the airy texture.
- Take some heart-shaped molds (or the shape you prefer) and sprinkle the bottom with crumbled biscuits to create a crunchy base.
- Pour the semi-freddo mixture into the molds on top of the biscuit base and let rest in the freezer for at least 4 hours or until they have solidified.
- Before serving, demold the semi-freddo hearts and leave them at room temperature for a few minutes so that they soften slightly.
