Passion Fruit Cheesecake

Ingredients

  • 200 g of Digestive biscuits
  • 100 g of melted butter
  • 500 g of cream cheese (such as Philadelphia)
  • 100 g of icing sugar
  • 200 ml of whipping cream
  • 10 g of gelatin sheets (or equivalent in granulated gelatin)
  • The juice of 3 passion fruits
  • 3 tablespoons of granulated sugar (for the sauce)

Preparation

  1. Start by finely crushing the Digestive biscuits until you have a sandy texture. Then, mix the melted butter with the crushed biscuits to get a homogeneous mixture.
  2. Press the biscuit mixture onto the bottom of a springform pan previously lined with parchment paper, creating a compact base. Place it in the refrigerator for about 30 minutes to harden.
  3. For the cream, soften the gelatin sheets in cold water for 10 minutes. Meanwhile, in a bowl, combine the cream cheese with the icing sugar and mix until you have a smooth cream.
  4. Heat the passion fruit juice in a saucepan without boiling it. Squeeze out the softened gelatin and dissolve it in the warm juice. Pour the mixture into the cream cheese and mix well.
  5. Whip the cream in a separate bowl and then gently fold it into the cheese mixture, using an upward motion to avoid deflating.
  6. Pour the obtained cream over the biscuit base in your mold and level the surface. Chill in the refrigerator for at least 4 hours, better if overnight.
  7. For the passion fruit sauce, strain the juice of another 2-3 passion fruits and mix it with the 3 tablespoons of sugar in a saucepan. Bring to a boil and let it reduce until you get a slightly thick sauce.
  8. When the cheesecake is well chilled and ready to serve, pour the passion fruit sauce over it.
