Parsley Potatoes

Parsley potatoes are a simple and tasty side dish. Here’s how to prepare them:

Ingredients

  • 500 g of potatoes
  • Fresh parsley to taste
  • 2 cloves of garlic
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste (optional)

Preparation

  1. Wash the potatoes and, if you prefer, peel them. You can also leave the skin on if they are well-cleaned organic potatoes.
  2. Cut the potatoes into evenly sized pieces to ensure they cook uniformly.
  3. Bring a pot of salted water to a boil and cook the potatoes until tender yet still firm, for about 10-15 minutes, depending on the size of the pieces.
  4. Meanwhile, wash and finely chop the fresh parsley and peel the garlic cloves.
  5. In a large skillet, heat a drizzle of extra virgin olive oil and sauté the garlic until golden brown. Then remove it.
  6. Drain the potatoes and transfer them to the skillet with the hot oil.
  7. Season the potatoes with salt and pepper to taste, then sauté in the pan for a few minutes until they become slightly crispy on the outside.
  8. Add the chopped parsley and stir well to distribute it evenly.
  9. Serve hot as a side dish to meat or fish entrees.
