Parmesan Fondue

Ingredients

  • 200 g of grated Parmesan cheese
  • 200 ml of fresh cream
  • 1 egg yolk (optional, serves to thicken further)
  • A pinch of nutmeg (optional)
  • Pepper to taste

Preparation

  1. Take a saucepan and pour the fresh cream inside. Heat it over medium-low heat until it starts to simmer.

  2. Lower the heat further and start adding the grated Parmesan, a little at a time, stirring continuously with a whisk to avoid lumps.

  3. Continue stirring until the Parmesan has completely melted into the cream and the mixture begins to thicken.

  4. (Optional) If you desire an even creamier texture, you can add an egg yolk to the fondue. To do this, remove the saucepan from the heat and, after letting the mixture cool for a moment, add the yolk stirring vigorously to blend it well and prevent it from cooking directly.

  5. Add a pinch of nutmeg and pepper to your taste to further flavor the fondue.

  6. Your Parmesan Fondue is now ready to be served. It is delicious enjoyed with toasted bread croutons, raw or steamed vegetables, or as a dressing for gnocchi or short pasta.
