Ingredients

  • Lamb chops (count about 3-4 chops per person)
  • 1 cup of breadcrumbs
  • 1/2 cup of grated Parmigiano-Reggiano
  • 2 tablespoons of chopped fresh parsley
  • 2 cloves of minced garlic
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 2 eggs
  • Flour for breading

Preparation

  1. Set up a breading station with three plates: in the first, put the flour, in the second, beat the eggs with a pinch of salt and pepper, and in the third, mix the breadcrumbs with the grated Parmesan, chopped parsley, and garlic.

  2. Take the lamb chops and, if necessary, clean them leaving only a thin layer of fat. Season lightly with salt and pepper.

  3. Dredge each chop first in the flour, then in the egg, and finally coat well with the breadcrumb and Parmesan mixture. Press gently to adhere the breadcrumbs well.

  4. In a frying pan, heat some extra virgin olive oil over medium-high heat. When the oil is hot, add the breaded chops and cook until they are golden brown on both sides and cooked to the desired degree (about 3-4 minutes per side for rare).

  5. Once cooked, transfer the chops to a plate lined with paper towels to remove excess oil.
