Lamb Chops with Parmesan and Parsley
17/11/2023Lamb chops with Parmesan and parsley are a delicious and quite simple dish to prepare. Here is the recipe:
Ingredients
- Lamb chops (count about 3-4 chops per person)
- 1 cup of breadcrumbs
- 1/2 cup of grated Parmigiano-Reggiano
- 2 tablespoons of chopped fresh parsley
- 2 cloves of minced garlic
- Salt and pepper to taste
- Extra virgin olive oil
- 2 eggs
- Flour for breading
Preparation
-
Set up a breading station with three plates: in the first, put the flour, in the second, beat the eggs with a pinch of salt and pepper, and in the third, mix the breadcrumbs with the grated Parmesan, chopped parsley, and garlic.
-
Take the lamb chops and, if necessary, clean them leaving only a thin layer of fat. Season lightly with salt and pepper.
-
Dredge each chop first in the flour, then in the egg, and finally coat well with the breadcrumb and Parmesan mixture. Press gently to adhere the breadcrumbs well.
-
In a frying pan, heat some extra virgin olive oil over medium-high heat. When the oil is hot, add the breaded chops and cook until they are golden brown on both sides and cooked to the desired degree (about 3-4 minutes per side for rare).
-
Once cooked, transfer the chops to a plate lined with paper towels to remove excess oil.
-
Serve the chops hot, perhaps with an additional sprinkle of fresh parsley if desired.
Curiosity
In some variations, grated lemon zest is added to the breading to give a touch of freshness to the dish. Lamb chops with Parmesan and parsley can be an excellent main course paired with a side of vegetables or a fresh salad. Furthermore, Parmesan being an Italian cheese, adds a very local note to this dish which could have influences from other world cuisines.
