Parisian Pizza with Ricotta and Spinach

Parisian pizza is a tasty dish that combines the goodness of pizza with the delicate flavor of ricotta and spinach. Here’s how to prepare it.

Ingredients

  • Ready-made puff pastry (about 250 g)
  • 250 g of high-quality fresh ricotta
  • 150 g of fresh or frozen spinach (if fresh, already cleaned)
  • 100 g of thinly sliced cooked ham
  • 100 g of mozzarella (or other melting cheese as desired)
  • 2 eggs
  • Salt and pepper to taste
  • Grated nutmeg (optional)
  • Extra virgin olive oil

Preparation

  1. If you are using fresh spinach, wash it well and cook it for a few minutes in a pan with a drizzle of oil until it has wilted. If you are using frozen ones, you can heat them directly in the pan until they are thawed and cooked. In both cases, squeeze the spinach well to eliminate excess water and roughly chop it.

  2. Preheat the oven to 180 °C.

  3. In a large bowl, combine the ricotta with the eggs, salt, pepper, and nutmeg. Mix until you get a homogeneous mixture.

  4. Add the chopped spinach to the ricotta mixture and mix well.

  5. Unroll the puff pastry and place it on a baking tray lined with parchment paper.

  6. Distribute the ricotta and spinach mixture over the puff pastry base, leaving a free edge of about 1 cm.

  7. Add the cooked ham and the diced or sliced mozzarella.

  8. Slightly fold the edges inwards to contain the filling.

  9. Bake and cook for about 25-30 minutes or until the puff pastry is golden and crisp.

  10. Remove the Parisian pizza with ricotta and spinach from the oven and let it rest for a few minutes before serving.

Despite the name, Parisian pizza does not have French origins; it is a preparation often found in pizzerias and bars in central and southern Italy. It is also perfect to be served as an appetizer or as a main dish, perhaps accompanied by a fresh seasonal salad.
