Paradise Tart

The Paradise Tart is an exquisite dessert that combines the crispness of shortcrust pastry with the delicacy of paradise cream filling. Here is the recipe.

Ingredients

  • 300 g of all-purpose flour
  • 150 g of powdered sugar
  • 150 g of cold butter, cubed
  • 1 whole egg and 1 yolk
  • A pinch of salt
  • Grated zest of 1 lemon

For the paradise cream:

  • 500 ml of milk
  • 4 egg yolks
  • 120 g of sugar
  • 40 g of flour
  • Zest of 1 lemon
  • 200 ml of whipping cream
  • Vanillin or vanilla extract

Preparation

  1. For the shortcrust pastry, start by mixing the flour and powdered sugar in a large bowl. Add the cold cubed butter and work the mixture with your fingertips until it has a sandy consistency.
  2. Make a well in the center and add the entire egg, the yolk, a pinch of salt, and the grated lemon zest. Knead quickly until you form a homogeneous ball, then wrap it in cling film and let it rest in the refrigerator for 30 minutes.
  3. Meanwhile, prepare the paradise cream. Heat the milk with the lemon zest in a saucepan until it is almost boiling. In a separate bowl, whisk the egg yolks with the sugar until you have a light and fluffy mixture. Add the flour and vanillin, then pour in the filtered hot milk, stirring continuously.
  4. Put the mixture back on the heat and cook over medium heat, stirring constantly, until the cream thickens. Once ready, cover with cling film in contact with the cream and let it cool completely.
  5. Preheat the oven to 180 °C. Roll out the shortcrust pastry on a floured surface, shaping it into a circle slightly larger than your tart pan. Line the pan with the pastry, trimming the excess and prick the bottom with a fork.
  6. Pour the cooled paradise cream into the tart and level it well. If you wish, you can also whip the cream and gently fold it into the cream with bottom-up movements before pouring it into the tart.
  7. Bake the tart for about 30-35 minutes or until the shortcrust pastry has turned golden and the cream has set slightly.
  8. Allow the tart to cool before removing it from the pan and serving it.

Paradise Cream gets its name from its incredibly soft and light consistency, almost as if you were eating a piece of “paradise”. To make it even more delicate, some pastry chefs choose to add whipped cream to the cream, making it even more airy and indulgent.
