Chocolate Chip Paradise Roll

Ingredients
- 4 eggs
- 120 g of sugar
- 120 g of type 00 flour
- 1 pinch of salt
- 1 packet of vanillin or vanilla extract
- 100 g of chocolate chips
- Powdered sugar (as much as needed for decoration)
- 250 g of pastry cream (for filling, optional)
Preparation
- Begin by separating the yolks from the whites.
- Whip the whites until stiff with a pinch of salt.
- In another bowl, beat the yolks with the sugar until you have a clear and frothy mixture, then add the vanillin or vanilla extract.
- Gently fold the whipped whites into the yolk mixture, alternating with the sifted flour, mixing from top to bottom to avoid deflating the mixture.
- Add the chocolate chips and mix gently until they are evenly distributed.
- Spread the mixture on a baking tray lined with parchment paper, leveling it well.
- Bake in a preheated oven at 180 °C for about 10-12 minutes or until the surface is lightly golden.
- Remove from the oven and flip the roll onto a piece of parchment paper dusted with powdered sugar. Gently roll it up using the paper and let it cool.
- Once cool, carefully unroll and, if desired, fill with the pastry cream. Reroll.
- Dust the roll with powdered sugar before serving.
You can choose to serve the roll as it is or accompany it with chocolate sauce or whipped cream for an extra touch of indulgence. Remember to add the pastry cream if you want a traditional filling, or you could also opt for a buttercream or chocolate ganache.
