Paprika Biscuits
17/11/2023I can suggest a recipe for paprika savory biscuits, perfect to accompany aperitifs or to enjoy as a snack. This is not a traditional Italian recipe, but I can give you a variation with a local touch by adding, for example, grated Parmesan for a richer and more distinct flavor. Here is the recipe:
Ingredients
- 250g of flour
- 100g of soft butter
- 80g of grated Parmesan cheese
- 1 large egg
- 1 tablespoon of sweet paprika
- A pinch of smoked paprika (optional to give an extra touch)
- A pinch of salt
- A pinch of pepper
- 1/2 teaspoon of baking powder for sweets
- Sesame or poppy seeds to garnish (optional)
Preparation
- Preheat the oven to 180 °C.
- In a large bowl, mix the flour with the baking powder, sweet paprika, smoked paprika if you decide to use it, salt, and pepper.
- Add the soft butter in pieces and work the mixture with your fingertips until you obtain a sandy consistency.
- Incorporate the grated Parmesan and egg, and knead until you form a homogeneous ball.
- Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
- Roll out the dough evenly on a lightly floured surface to a thickness of about 5mm.
- Cut out the biscuits with a cookie cutter in the shape you prefer and transfer them to a baking sheet lined with parchment paper, leaving a little space in between.
- If you like, brush the surface of the biscuits with a little milk and sprinkle with sesame or poppy seeds.
- Bake in the oven for about 15-20 minutes or until the biscuits are golden and crispy.
- Let them cool on a rack before serving.
These savory biscuits are delicious on their own or accompanied by other delicacies during an aperitif. If you don’t have smoked paprika or seeds for garnishing, don’t worry, the recipe will still be tasty thanks to the Parmesan and sweet paprika.
Curiosity
In Hungarian cuisine, paprika is widely used and there are similar biscuits to these that are part of the local culinary tradition. In Italy, however, the use of spices like paprika in biscuits is not typical, but it is always pleasant to discover new flavors and international combinations enriched by the touch of our local ingredients.
