Panzerotti Stuffed with Vegetables and Scamorza Cheese
17/11/2023Panzerotti stuffed with vegetables and scamorza cheese are an excellent way to enjoy a flavorful and taste-rich meal. Here’s the recipe to prepare them.
Ingredients
- 500 g of pizza dough or bread dough
- 200 g of smoked scamorza cheese, cut into cubes
- 200 g of mixed vegetables (such as zucchini, eggplant, bell peppers), grilled or sautéed
- Salt and pepper to taste
- Extra virgin olive oil to taste
- 1 clove of garlic (optional)
- Oregano or fresh basil (according to preference)
Preparation
- Start by preparing the vegetables. If you don’t have them ready, wash and cut the vegetables into pieces and sauté them in a pan with a drizzle of oil and a clove of garlic (if using) until they are soft. Season with salt and pepper and let them cool down.
- Take the dough, divide it into balls of about 80-100 g each. With the help of a rolling pin, roll out the balls into discs of about 15 cm in diameter.
- In the center of each disc of dough, place a bit of vegetables and smoked scamorza. Sprinkle with a pinch of oregano or torn fresh basil.
- Close the panzerotti by pinching the edges well to seal them: you can do this by pressing with your fingers or using a fork to also create a decorative effect.
- Heat a generous amount of oil in a pan and once the temperature is reached, fry the panzerotti until they are golden on both sides.
- Drain them with a slotted spoon and place them on paper towels to remove the excess oil.
- Serve hot.

The panzerotto is a culinary specialty typical of the southern regions of Italy, especially Puglia and Campania. Its name comes from the German word “Panz,” which means belly, indicating the puffy and round shape of the panzerotto. Traditionally fried, it can also be baked for a lighter version.
