Panna Cotta with Citrus Sauce

Ingredients for the panna cotta:
- 500 ml of fresh cream
- 100 g of sugar
- 1 vanilla pod or 1 teaspoon of vanilla extract
- 5 sheets of gelatin (or 10 g of gelatin powder)
Ingredients for the citrus sauce:
- Juice of 2 oranges
- Juice of 1 lemon
- Zest of 1 orange
- Zest of 1 lemon
- 50-70 g of sugar (depending on the desired sweetness)
- 1 tablespoon of orange liqueur (optional)
Preparation of the panna cotta:
- Place the gelatin sheets in a bowl of cold water to soften them.
- Meanwhile, pour the cream into a saucepan, add the sugar and vanilla (if using a pod, split it and scrape out the seeds adding them to the cream), and heat over medium heat until the sugar has dissolved completely, without boiling.
- Squeeze the gelatin sheets to remove excess water and add them to the saucepan with the warm cream. Stir well until the gelatin has completely dissolved.
- Remove the vanilla pod (if used) and pour the mixture into molds or glasses and leave to cool. Then refrigerate for at least 4 hours, or until the panna cotta has solidified.
Preparation of the citrus sauce:
- In a saucepan, mix the orange juice, lemon juice, grated zests, and sugar.
- Cook over medium heat, stirring often, until the sauce has reduced by about a third and has thickened slightly. This may take about 10-15 minutes.
- Later, you can choose to strain the sauce to remove the zest or leave them in for a more rustic effect. Add the orange liqueur if desired.
- Allow the sauce to cool before drizzling over the panna cotta or serving it on the side.
Presentation:
Once the panna cotta has set, pour some of the citrus sauce over each portion. You can garnish with citrus slices or mint for a touch of color.
