Panettone Muffins

Ingredients
- 300 g of panettone (ready-made or leftover)
- 150 g of type 00 flour
- 2 medium eggs
- 100 g of sugar
- 100 ml of milk
- 60 ml of seed oil
- 1 packet of baking powder
- Grated zest of one orange (optional for flavoring)
- Butter and flour to butter and flour the muffin mold
- Icing sugar for decoration (optional)
Preparation
- Preheat the oven to 180 °C.
- In a large bowl, crumble the panettone with your hands until it is reduced to small pieces.
- In another bowl, beat the eggs with the sugar until the mixture is light and fluffy.
- Add the oil and milk to the egg and sugar mixture and mix well.
- Gradually incorporate the sifted flour and baking powder, mixing gently to avoid lumps.
- If you wish to add an extra flavor, integrate the grated orange zest.
- Combine the panettone pieces into the mixture and stir gently to distribute them evenly.
- Butter and flour the muffin molds, or use paper liners.
- Fill them with the mixture up to three-quarters of their height.
- Bake in the oven for about 20-25 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
- Remove from the oven and let the muffins cool on a wire rack.
- If desired, dust the muffins with icing sugar before serving.
