Panettone French Toast

Panettone is a classic Italian Christmas sweet, but there’s no reason it can’t be transformed into delicious French toast, a perfect recipe for recycling leftover panettone. Here’s how to do it.

Ingredients

  • Leftover slices of panettone (about 1-2 cm thick)
  • 2 large eggs
  • 120 ml of milk
  • 1 teaspoon of vanilla extract (optional)
  • A pinch of ground cinnamon
  • A pinch of salt
  • Butter or oil for cooking
  • Powdered sugar for garnish
  • Maple syrup or jam to serve with

Preparation

  1. In a bowl large enough to dip a slice of panettone into, beat the eggs with milk, vanilla extract, cinnamon, and a pinch of salt until you have a smooth mixture.

  2. Heat some butter or oil in a non-stick skillet over medium heat.

  3. Dip the panettone slices into the egg mixture, making sure they are well soaked but not so much that they fall apart.

  4. Lay the soaked slices in the hot skillet and cook for about 2-3 minutes per side, until they become golden brown and crisp.

  5. Serve the panettone French toast hot, sprinkled with powdered sugar and accompanied by maple syrup or jam of your choice.
