Pandoro Swirls

Pandoro swirls are a Christmas dessert that turns the classic pandoro into delightful spirals that are just as pleasing to the eye as they are to the palate. Here I’ll explain how to prepare them.

Ingredients

  • 1 pandoro
  • 250 g of mascarpone
  • 100 g of powdered sugar
  • Unsweetened cocoa powder for dusting
  • Liquor of choice (for example, an orange or chocolate liqueur)
  • Candied fruit or chocolate shavings for decoration (optional)

Preparation

  1. Cut the pandoro into horizontal slices about 1 cm thick.
  2. With the help of a rolling pin, gently roll out each slice to thin and slightly enlarge it.
  3. In a bowl, work the mascarpone with the powdered sugar until you obtain a smooth and homogeneous cream.
  4. Add a little liquor to the mascarpone cream to flavor it, if you wish.
  5. Spread a thin layer of mascarpone cream on each slice of pandoro laid out and if you like, add a sprinkle of candied fruit or chocolate shavings over the cream.
  6. Gently roll up the slices of pandoro to form the swirls.
  7. Place the swirls in the refrigerator for at least an hour before serving, so that they firm up well.
  8. Before serving, dust the swirls with unsweetened cocoa and garnish with additional chocolate shavings or candied fruit if you chose.

Pandoro swirls can be accompanied by a thin chocolate sauce or by custard for a contrast of flavors and textures. They are perfect for using up leftover pandoro after the holidays in an original and delicious way.
