Eggless Pancakes

Ingredients
- 1 cup of flour
- 1 tablespoon of sugar
- 1 teaspoon of baking powder
- 1 pinch of salt
- 1 cup of plant-based milk (for example almond, soy, rice, or oat)
- 2 tablespoons of vegetable oil
- 1 teaspoon of vanilla extract (optional)
Preparation
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, combine the plant-based milk, oil, and vanilla extract. Mix until everything is well combined.
- Pour the liquid ingredients over the dry ingredients and gently stir until there are no lumps. Avoid overmixing to keep the pancakes fluffy.
- Heat a non-stick pan on medium heat and, if necessary, lightly grease it with a bit of oil.
- Pour a small amount of batter onto the hot pan and cook until the pancake is filled with bubbles on the surface and the edges look cooked.
- Flip the pancake with a spatula and cook for another 1-2 minutes or until golden on the other side.
- Repeat with the rest of the batter, adjusting the heat if necessary to prevent the pancakes from burning.
- Serve the pancakes hot with maple syrup, fresh fruit, jam, or other toppings of your choice.
Curiosity
In case there is no plant-based milk available, you can create a homemade substitute: for 1 cup of milk, you can use 1 cup of water and 2 tablespoons of finely ground almond flour or oat flakes. Add a pinch of sugar and a drizzle of oil to emulate the consistency of milk.
