Eggless Pancakes

Here is a simple recipe for making eggless pancakes:

Ingredients

  • 1 cup of flour
  • 1 tablespoon of sugar
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 1 cup of plant-based milk (for example almond, soy, rice, or oat)
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of vanilla extract (optional)

Preparation

  1. In a large bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the plant-based milk, oil, and vanilla extract. Mix until everything is well combined.
  3. Pour the liquid ingredients over the dry ingredients and gently stir until there are no lumps. Avoid overmixing to keep the pancakes fluffy.
  4. Heat a non-stick pan on medium heat and, if necessary, lightly grease it with a bit of oil.
  5. Pour a small amount of batter onto the hot pan and cook until the pancake is filled with bubbles on the surface and the edges look cooked.
  6. Flip the pancake with a spatula and cook for another 1-2 minutes or until golden on the other side.
  7. Repeat with the rest of the batter, adjusting the heat if necessary to prevent the pancakes from burning.
  8. Serve the pancakes hot with maple syrup, fresh fruit, jam, or other toppings of your choice.

Curiosity

In case there is no plant-based milk available, you can create a homemade substitute: for 1 cup of milk, you can use 1 cup of water and 2 tablespoons of finely ground almond flour or oat flakes. Add a pinch of sugar and a drizzle of oil to emulate the consistency of milk.

I hope this will be useful for you to prepare delicious pancakes even without using eggs!
