Pancakes with Greek Yogurt
17/11/2023Here’s an Italian twist on the traditional pancake recipe with the addition of Greek yogurt, which will make your pancakes even softer and more protein-rich.
Ingredients
- 150 g of all-purpose flour
- 200 g of Greek yogurt
- 2 eggs
- 50 ml of milk
- 2 tablespoons of granulated sugar
- 1 pinch of salt
- 1/2 packet of baking powder for sweets
- Butter as needed to cook the pancakes
- Honey or maple syrup to serve
Preparation
- In a large bowl, beat the eggs with sugar and a pinch of salt until frothy.
- Add the Greek yogurt and continue to mix.
- Gradually incorporate the sifted flour with the baking powder, alternating with the milk, until you have a smooth, lump-free batter.
- Heat a non-stick frying pan and lightly grease it with a piece of butter.
- Pour a ladle of batter onto the hot pan and cook over medium-low heat until bubbles form on the surface of the pancake.
- Once the bubbles are visible, flip the pancake with a spatula and cook for another 1-2 minutes or until golden on the other side.
- Repeat the process until all the batter is used up, adding more butter between batches if necessary.
- Serve warm with honey or maple syrup as desired.
