Pancakes with Greek Yogurt

Ingredients

  • 150 g of all-purpose flour
  • 200 g of Greek yogurt
  • 2 eggs
  • 50 ml of milk
  • 2 tablespoons of granulated sugar
  • 1 pinch of salt
  • 1/2 packet of baking powder for sweets
  • Butter as needed to cook the pancakes
  • Honey or maple syrup to serve

Preparation

  1. In a large bowl, beat the eggs with sugar and a pinch of salt until frothy.
  2. Add the Greek yogurt and continue to mix.
  3. Gradually incorporate the sifted flour with the baking powder, alternating with the milk, until you have a smooth, lump-free batter.
  4. Heat a non-stick frying pan and lightly grease it with a piece of butter.
  5. Pour a ladle of batter onto the hot pan and cook over medium-low heat until bubbles form on the surface of the pancake.
  6. Once the bubbles are visible, flip the pancake with a spatula and cook for another 1-2 minutes or until golden on the other side.
  7. Repeat the process until all the batter is used up, adding more butter between batches if necessary.
  8. Serve warm with honey or maple syrup as desired.
