Tower of pancakes

The tower of pancakes is a scrumptious dish that is perfect for both a hearty breakfast and brunch. Here’s how to prepare it, with an Italian touch that never fails to impress.

Ingredients

  • 2 eggs
  • 1 glass of milk
  • 1 glass of flour
  • 2 tablespoons of sugar
  • 1 pinch of salt
  • 1/2 sachet of baking powder
  • Butter for the pan
  • Fresh fruit to taste (for example strawberries, blueberries, or bananas)
  • Maple syrup or honey

Preparation

  1. In a bowl, whisk the eggs with the sugar until you have a frothy mixture.
  2. Add the milk, then the sifted flour, the pinch of salt, and the baking powder, and mix until you have a smooth batter.
  3. Heat a non-stick pan and add a bit of butter.
  4. Pour a ladle of batter into the pan and cook the pancake until bubbles start to form on the surface, then flip it and cook for another minute on the other side.
  5. Repeat until the batter is finished, stacking the pancakes on top of each other to form the tower.
  6. Garnish the tower of pancakes with cut fresh fruit and a drizzle of maple syrup or honey.

To add an even more Italian touch, you can spread a thin layer of Nutella or jam between one layer and the next.

Curiosity

Pancakes are a typical North American preparation, but in Italy, we have a similar version called “frittelle” or “crespelle”. The American variant involves the use of baking powder to make the pancakes thicker and fluffier. The tower of pancakes, then stacked high and served with maple syrup, has become iconic for “American-style” breakfasts.
