Skillet Pizza

Skillet pizza is a practical and fast solution for enjoying homemade pizza without the need for an oven. Here is the recipe:

Ingredients

  • 250 g of type 00 flour
  • 150 ml of lukewarm water
  • 3 g of fresh brewer’s yeast (or 1 g of dry brewer’s yeast)
  • 1/2 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1 tablespoon of extra virgin olive oil
  • Tomato sauce (quantity to taste)
  • Mozzarella (quantity to taste)
  • Fresh basil (optional)
  • Fine salt
  • Dried oregano (optional)

For the topping, you can choose ingredients according to your taste: ham, mushrooms, olives, etc.

Preparation

  1. Begin by dissolving the fresh brewer’s yeast in lukewarm water with sugar. Let it rest for a few minutes until it starts to bubble.

  2. In a large bowl, mix the flour with the salt, then add water with yeast, and finally the olive oil. Knead with your hands until you have a smooth, homogeneous dough. If the dough appears too wet, add a bit more flour; if it’s too dry, a little more water.

  3. Work the dough for about 10 minutes, then shape it into a ball, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it doubles in volume.

  4. Once the dough has risen, divide it into balls that will be used to form the bases of your pizzas.

  5. Roll out the balls of dough into discs, more or less thin, according to your preferences.

  6. Heat a non-stick pan and, once hot, place a disc of dough in it.

  7. When the base begins to puff up and brown, flip it over and add tomato sauce, diced mozzarella, salt, oregano, and whatever your preferred ingredients are, immediately.

  8. Cover with a lid to ensure the heat stays inside and cooks the topping and mozzarella.

  9. The pizza is ready when the cheese has melted and the base is crispy.

  10. Finally, if you like, add some leaves of fresh basil for flavor.

Skillet pizza is a valid alternative to classic oven-baked pizza, perfect for those who don’t have access to a wood-fired oven or a pizza stone. The skillet cooking method, very similar to the “tigella technique,” allows to achieve a pizza with a pleasantly crispy crust and a soft interior.
