Sautéed Shrimp

Ingredients
- 400 g of fresh or frozen shrimp
- 2 cloves of garlic
- Chopped fresh parsley (to taste)
- Extra virgin olive oil
- Salt (to taste)
- Black pepper (to taste)
- Juice of 1 lemon
- Chili pepper (optional)
Preparation
- If you are using frozen shrimp, allow them to thaw completely. Clean the shrimp by removing the head, tail, and shell. Make a slit along the back and remove the intestinal tract.
- In a large pan, heat a drizzle of extra virgin olive oil and add the peeled garlic cloves. Sauté for one minute over medium heat without letting them brown too much.
- Add the shrimp to the pan and cook for about 2-3 minutes per side, until they turn pink and slightly golden.
- Deglaze with the lemon juice, add salt, pepper, and the chili pepper if desired, letting it flavor for a few minutes.
- Lastly, sprinkle with chopped fresh parsley before turning off the heat.
- Serve the shrimp immediately while hot, accompanied if you wish by lemon wedges for those who want to add a bit more acidity.
