Ingredients
- 4 gilthead sea bream fillets
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- 1 clove of garlic
- Juice of 1/2 lemon
- Aromatic herbs to taste (for example, parsley or thyme)
- Flour, enough to dust the fillets (optional)
Preparation
- Start by cleaning the gilthead sea bream fillets, making sure they are free of bones. If you like, you can lightly flour them, this step helps to obtain a crispier crust.
- Heat the extra virgin olive oil in a frying pan together with the whole clove of crushed garlic.
- Once the oil is hot and the garlic has started to sizzle, remove the garlic and lay the gilthead sea bream fillets skin side down. Cook over medium-high heat for about 3-4 minutes, until the skin becomes crispy.
- Gently turn the fillets over and cook for another 2-3 minutes, seasoning with salt and pepper.
- Deglaze with the lemon juice and finish cooking over low heat for a minute, so that the fish absorbs the aromas.
- At the end of cooking, sprinkle the fillets with freshly chopped aromatic herbs.
Serve the pan-fried gilthead sea bream fillets immediately, accompanied if desired by simple side dishes such as gratinated vegetables or a fresh mixed salad.
