Pan-seared salmon fillet

Ingredients
- 2 salmon fillets (about 150-200g each)
- Salt and pepper to taste
- 2 tablespoons of extra virgin olive oil
- 1 clove of garlic
- Juice of 1/2 lemon
- Aromatic herbs to taste (for example, thyme or rosemary)
Preparation
- Preheat the frying pan over medium heat.
- In the meantime, pat the salmon fillets dry with kitchen paper and season them with salt and pepper on both sides.
- Add the extra virgin olive oil to the pan and let it heat up for a minute.
- Add the clove of garlic and the aromatic herbs to the pan to flavor the oil.
- Place the salmon fillets in the pan skin-side down. Cook them for about 3-4 minutes, until the skin becomes crispy.
- Gently turn the salmon fillets over with a spatula and cook for another 3-4 minutes on the other side.
- Squeeze the lemon juice over the salmon fillets just before turning off the heat.
- Remove the garlic and aromatic herbs and serve the salmon immediately.
