Sautéed Prawns

Ingredients

  • 500 g of fresh or frozen prawns
  • 2 cloves of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • 1/2 glass of white wine (optional)
  • Lemon juice (for serving, optional)

Preparation

  1. If you’re using frozen prawns, ensure they are completely thawed. If using fresh prawns, clean them by removing the shell and the intestine with a toothpick or a small knife, leaving or removing the head according to your preferences.
  2. Heat a generous swirl of extra virgin olive oil in a large skillet over medium-high heat. Add the squashed or finely chopped garlic cloves.
  3. When the garlic begins to sizzle and turns golden, place the prawns in the pan in a single layer, to brown them well on all sides.
  4. Season the prawns with salt and pepper and cook for about 2-3 minutes per side, until they turn a nice pink-orange color and are cooked just right.
  5. If desired, deglaze with white wine and let the alcohol evaporate, to add an aromatic note to the dish.
  6. Toward the end of cooking, sprinkle the prawns with finely chopped fresh parsley.
  7. Serve hot, preferably with slices of lemon to squeeze over as you like.
