Sautéed Potatoes and Bell Peppers
17/11/2023Sautéed potatoes and bell peppers is a typical side dish of Italian cuisine: simple, colourful and tasty. Here’s the recipe.
Ingredients
- 500 g of potatoes
- 2 bell peppers (better if of different colors, for example one red and one yellow)
- 2 cloves of garlic
- Extra virgin olive oil
- Salt
- Black pepper
- A bunch of fresh parsley (optional)
Preparation

Start by washing the potatoes and, if you prefer, peeling them. Then cut them into cubes of about 2 cm on each side.

Wash the bell peppers, remove the seeds and white inner parts and cut them into strips or cubes, according to your preference.

In a large skillet, heat a generous swirl of extra virgin olive oil and add the peeled and crushed garlic cloves.

When the garlic starts to sizzle, add the potatoes and brown them for a few minutes over high heat, stirring occasionally.

Lower the heat, cover the pan, and let the potatoes cook until they are almost tender to the right point, this could take about 15-20 minutes depending on the size of the cubes.

Add the bell peppers, adjust with salt and pepper and continue cooking (still covered) for another 10-15 minutes, stirring occasionally. Cooking times can vary depending on the desired crunchiness of the bell peppers.

If you wish, towards the end of cooking, you can uncover the pan to evaporate the water released by the peppers and make the potatoes and peppers more golden and slightly crispy.

If you like, just before turning off the heat, add some chopped fresh parsley.
Let it rest for a few minutes before serving this colorful and tasty dish, which will perfectly accompany both meat and fish.
Curiosity
In some Italian regions, julienned onions are also added for an extra touch of sweetness and flavor. Other variants include a pinch of chili pepper for a spicy kick. Depending on the season and the region, every family has its version of this classic Italian side dish!
