Skillet Potato Cake

Ingredients
- 500 g of potatoes
- 1 medium onion
- 2-3 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Aromatic herbs of your choice (for example, rosemary or thyme)
- 2-3 tablespoons of grated Parmesan cheese (optional)
- 2 eggs (optional, to bind and enrich)
Preparation
- Start by peeling and washing the potatoes, then slice them thinly or grate them coarsely.
- Peel the onion and slice it thinly.
- In a non-stick skillet, heat the extra virgin olive oil and sauté the onion until it becomes transparent and slightly golden.
- Add the potatoes, salt and pepper to your taste, and if you like, the chopped aromatic herbs.
- Cook over medium heat, stirring occasionally, until the potatoes start to brown and soften. If necessary, you can cover the skillet to speed up cooking.
- (Optional) If you want a more compact cake, beat the eggs in a bowl with a little salt, pepper, and the grated Parmesan, and pour them over the now soft potatoes, spreading them evenly.
- Continue cooking until the bottom is golden and crispy. Then, with the help of a lid or a plate, flip the cake and let the other side brown.
- Once it is well browned on both sides, your skillet potato cake is ready to be served.
For an Italian twist, you could add cubes of pancetta or ham halfway through cooking and sprinkle the cake with shavings of Parmesan or Pecorino before serving.
