Pan-Fried Pork Chops

Ingredients

  • 4 pork chops
  • 2 cloves of garlic
  • Fresh rosemary to taste
  • Salt and black pepper to taste
  • Extra virgin olive oil to taste
  • White wine, about 100 ml
  • (Optional) Lemon juice, to add a touch of freshness

Preparation

  1. To start, take the pork chops and make sure they are at room temperature; this will help the cooking to be more even.
  2. Season them with salt and pepper on both sides.
  3. In a large pan, heat a drizzle of extra virgin olive oil and add the whole garlic cloves (you can lightly crush them to release more aroma) and a sprig of fresh rosemary.
  4. When the oil is hot and flavored, add the pork chops.
  5. Brown the chops over medium-high heat for about 3-4 minutes per side until they have acquired a nice golden color.
  6. Deglaze with white wine and let the alcohol evaporate on high heat.
  7. Lower the flame, cover the pan with a lid, and let the chops cook for about another 15-20 minutes, turning them occasionally. If necessary, add a little water to prevent the cooking base from drying out too much.
  8. Once they are cooked, you can finish with a splash of lemon juice to add a bit of acidity and freshness, if you wish.

Serve your chops hot, perhaps accompanied by a side of roasted potatoes or a fresh seasonal salad.
